Summer Fruit Ice Lollies

With all the renovations going on in our household, baking/cooking has had to be put to one side for a good while as there has been no room to be as creative ( and messy! ) as I love to be. So now that there is a little more space, I have finally been able to make a super simple summer recipe to make it feel a little bit more like the season is meant to be; us Brits really don’t have it easy this time of year!

So without rambling on for much longer, I have made two different flavoured Summer Fruit Ice Lollies which both have really different tastes but are super refreshing. There isn’t really much to making these, though there is an investment required to make them (well worth it though). You will need to have a ice lolly tray mould so that you get the full affect. The two flavour combonations that I have made are a Tangy Raspberry & Lemon flavour and a Creamy Blueberry & Coconut flavour. Think my personal favourite has to be the second one but am happy with how both have turned out.

Ingredients

Raspberry & Lemon

  • 140g Alpro Yoghurt
  • 20g Honey
  • 160g Raspberries
  • Zest of lemon

Blueberry & Coconut

  • 140g Alpro Yoghurt
  • 20g Honey
  • 140g blueberries
  • 30g desiccated coconut

Method

  • Simply add all ingredients to a food processor/blender and mix together until it forms a smooth slushy texture.
  • Pour into the moulds evenly and then place in the freezer for a minimum of 2 hours.
  • Once they are completely frozen you are free to enjoy!

The beauty of this method is you can see how easy it is to change a couple of ingredients over to make your very own flavours too!

I am going to try out a couple more ideas that are more along the lines of being ice-creams than ice-lollies as I really do love a chocolate or vanilla ice cream during this time of year (when the weather is on our side!).
