It has come to that time of year were all supermarkets and window displays are filled with the well-rounded orange vegetable that is known as the pumpkin. Traditionally used for Halloween decorations and autumnal recipes, there is no shying away from them this season!
In light of their popularity, last year I came up with this incredible recipe and decided to restyle it and post it again for a fresher (more updated) look. Plus, I couldn’t resist baking these incredible pumpkin spiced doughnuts again! They are definitely own of my most successful creations to date – you will find out when you try them!
This is the perfect way to use up all that pumpkin puree after carving out your ‘works out art’. Let’s just say, you may want to bake an extra batch for yourself as there is no telling how quickly these doughnuts will disappear like a ghost ( another Halloween joke for you).
Makes 10 doughnuts
- 80g Oat Flour
- 20g Almond Flour
- 1 medium egg
- 80g pumpkin puree
- 100ml almond milk
- 50g Sukrin Gold
- 40g coconut oil
- 1/3 tsp nutmeg
- 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 30g maple syrup
- 1/2 tsp baking powder
- 1/2 tsp salt
- Pre-heat 350C or Gas Mark 4
- Fork together flours in a large bowl along with baking powder, salt, nutmeg, cinnamon and sugar
- In two separate bowls, separate egg yolk from egg white, then add in milk, vanilla, melted coconut oil and maple syrup.
- Whisk egg white until foamy (this is how you can get extra fluffy bakes!) and add to the egg yolk mixture
- Now add wet to dry mix and fold in carefully, being sure not to overwork
- Now split the mixture in a non-stick doughnut tray and bake for 15-20 minutes, keep a close eye until golden.
- Cool on a wire rack for around 30 minutes or devour straight from the oven!
I sprinkled mine with Sukrin Icing sugar, but you could create a beautiful maple syrup glaze using this icing sugar, 1 tbsp of maple syrup and 30ml water.
