
To go along side my ‘Healthy Snack Ideas’ video on Youtube, I have created this simple recipe to help you get create in the kitchen as will as bring some homemade healthy treats into your day; Almond & Goji Berry Bites.
I have made a couple of energy ball recipes before but these are just incredible, thanks to the superfood ingredient of goji berries. They are little sweet fruits and have a soft texture. There are many health benefits to the goji berry, including boosting your immune system and helping to maintain healthy skin!
Ideal for a quick snack on the go with a lovely cuppa.
Makes 10 bites
Ingredients
- 60g almonds
- 20g almond butter
- 15g goji berries
- 100g dates
- 3-4 tbsp almond milk
- Desiccated coconut
Method
- Start by blitzing the whole almonds in a food processor until they are in a soft powder form – you can have some of them a little chunky though, adds a crunchy texture!
- Next blend the dates into a smooth paste with the raw almonds.
- Now add in all the remaining ingredients, blending together until they are all combined together nicely
- Roll out mixture into 10 balls, and then cover in coconut
